When artist collective Greatest Hits wanted to capture the fleeting thrill of unboxing a brand-new laptop, they did not write about it. They asked our perfumers in France to reverse-engineer it: the sweet, static crinkle of cellophane, the dry papery scent of the box, a bitter note of adhesive, giving way to the cold cleanliness of aluminum. The resulting fragrance, first shown in Melbourne and later exhibited in Tokyo, Paris, and New York, became a scent study of “newness” itself, diffused through our Aroslim system for gallery visitors to experience firsthand.
A similar logic drove Tender, a gallery installation built entirely around the scent of a freshly printed US dollar bill. Working with the artist and a perfumer who spent months extracting real chemical compounds from pressed currency, we helped fill a 6,000-square-foot New York gallery with an ambient scent built from cotton, ink, leather, metal, and worn paper, an idea rather than a fragrance family.
Neither of these projects would have made sense as a bottled perfume. They only work as ambient, site-specific scent design, which is precisely the territory niche fragrance is nudging consumers to be curious about: scent as concept, not just cologne.
Niche Thinking Meets the Dinner Table
Nowhere does unconventional scent design earn its keep quite like the dinner table, where a fragrance can be paired to a dish the way a sommelier pairs a wine.
At a multi-sensory tasting menu hosted by an executive chef in Florida, we diffused two distinct fragrances across a five-course meal built to engage all five senses. During the forest-themed course, served with edible soil, wild mushrooms, and roasted onion, we diffused a Wood aroma rich with leather, tree moss, cedarwood, and pine, transporting diners into a dark forest before they had taken a bite. Later in the meal, an ocean-inspired course of cured wahoo, sea beans, and poached lobster was paired with a light, crisp Sea Scent fragrance built to replicate ocean air. The chef described guests as completely in awe of the pairing between plate and atmosphere.
It is a technique we have carried into events across categories: ambient scent that shifts and builds course by course, or moment by moment, rather than sitting static in the background. At The Sapphire Dinner, held in Sydney’s Art Gallery of New South Wales to raise funds for ocean conservation, we filled a transformed World War II fuel tank with an oceanic fragrance called Deep Dive, working in tandem with projections, live music, and lighting to turn a heritage industrial space into an underwater world for the night, part of an event that ultimately raised over $1.6 million for reef restoration.

At the Schweppes marquee during Melbourne’s spring racing carnival, we built two custom fragrances timed to the rhythm of race day: a zesty citrus blend inspired by the brand’s Indian Tonic Water for the first half of the day, shifting to a warmer citrus and ginger spice blend echoing Dry Ginger Ale as the afternoon wore on. Guests moved through an entire day of racing without ever consciously noticing the scent had changed, only that the atmosphere felt right.
That same instinct scales down beautifully for pop-up retail. A limited-run product launch or seasonal display can carry its own signature scent, timed to a single weekend or a single season, in exactly the way a niche perfume house might release a limited edition built around one idea rather than a permanent collection.
